Geology

Forty million years ago, with the forces of water and tectonic plate movement, Australia's Murray river system was born. The third longest navigable river in the world, after the Amazon and Nile. These events caused the inland flow of rich fertile sediment and soil layers. Now commonly referred to as the "Food Bowl of Australia”; Aboriginal people have relied on the river systems abundance for millennia. Victoria’s North West wine region and Andrew Peace Wines, sits uniquely within the this Murray Darling Basin, unlike most other Australian wine growers, which gives our wines, a distinct character.

Soils

Pinkish brown sandy top soil provides sufficient water absorption and drainage, while a retaining and reflecting heat toward the vines. It overlays moderately calcareous sandy clay loam to light clay sub soils.  The calcareous clay soils have high limestone content that neutralizes natural acidity of the soil with high levels of calcium and Magnesium carbonate. A soil type typical of Champagne and Burgundy and ideal for red and white wines.

With a macroclimate characteristics akin to a ‘Continental climate’ not unlike Burgundy; and very unlike the typical Maritime and or Mediterranean climates of almost all other Australian wine regions, Andrew Peace Wines offers Australia’s most distinctive wines crafted from a combination of a unique terroir.

Thirty-five years on from planting its first block, Andrew Peace Wines remains a proud family business and one of the largest family owned wineries in Australia. What started as a weekend escape transformed into a family passion.

Through much toil of three Peace generations the 'country retreat' vineyard produced its first vintage in 1995 and a commercial winery was born. Every vintage since has accompanied another chapter of family life - celebrations, milestones and happy memories.

David King graduated in 2006 from the University of Adelaide in Oenology, working in France and Italy, before joining APW as assistant winemaker for Vintage 2009. Promoted to senior winemaker in 2014, David has had a major influence at Andrew Peace Wines since that time, and has received many awards.

This wine is made using exacting methods honed over a number of years. 


这品酒用严格的亚光抛磨法经过几年制成  


Firstly, the fruit used is top quality and low yield , only being  selected for this product once a total field assessment  has taken place and no fruit compromise must be present. 


首先,果子是低量高质的:一次性采摘挑选过的,经过全圆评估的不能降低要求的当季果子    


Fermentation takes place traditionally .   Apart from the fact we use a hot ferment to drop out phenols  


传统发酵,除了表面我们采用热发酵来滴出它的石碳酸


But this is where tradition stops and new techniques comes into play.   Firstly there must be a balance between the correct amount of o2(oxygen) present  so the wine doesn't become reductive and co2(carbon dioxide) to protect the fruit.  Once MLF(malolactic fermentation) has finished and with minimal movements , the wine is cold chained at very low temperatures all the way to packaging.   This cold handling along with the gas management ensures freshness.    You will notice that a small amount of natural effervescence  remains at bottle opening.  This will dissipate  over a small amount of time but greatly helps to protect the wine.  Trials show the wine will stay fresh for longer than 2 years, stored under 18c temperature.


由此开始传统被新技术替代。首先氧气量要被准确平衡掉,所以酒不会降低含碳量以致能保护果子。一旦苹果乳酸发酵结束并随着极小的移动,葡萄酒在非常低温的环境下渐渐冷却下来直接进包装。这个冷却操作在煤气管理系统下保证他的新鲜度。你会注意到这是很小量的自然氧化,而不是添加硫 。这将花费一点时间,但极大地有助于保护葡萄酒。在18度常温下的保鲜期可以二年以上。


An interesting fact from research in the USA shows that 80 % of customers that drink organic wines do so ,thinking  they are  low in  so2 .   But in fact organic wines can contain up to 100 ppm.  Where as our wine has zero so2

A wine with a faint scent of violet petals, enhanced by an aroma and bouquet reminiscent of black berries. Its mid-bodied character and mellow, spicy, warm taste, is typically partnered with roasted meats, game and piquant cheeses.

In order to reach perfect maturation a protracted period of ageing is required owing to the high concentration of polyphenols and tannins.

Anthocyanins (also anthocyans; from Greek: (anthos) = flower +  (kyanos) = blue) are water-soluble vacuolar pigments that may appear red, purple, or blue depending on the pH. They belong to a parent class of molecules called flavonoids synthesized via the phenylpropanoid pathway; they are odourless and nearly flavourless, contributing to taste as a moderately astringent sensation
