通心粉&芝士和鸡肉通常被称为“南方炸鸡”(soul food),这些广受欢迎的美食在很多特殊场合有着牢固的地位。(图2)非洲裔美国人社区对通心粉&芝士有着很高的期待。大部分情况下,这道美食从零开始做,用各种不同类型的芝士,有时加点“秘方”配料,或者一层甜品酱,基本是烘烤制作的,虽然可能会有些地域差异。这道美食是假日常见的配菜。


历史上,鸡肉一直是一种可负担得起的肉类来源,并已成为很多美国饮食传统的常见原料。在灵魂美食中,你可以看到炸鸡肉、烘烤鸡肉、烧烤鸡肉或者其他几种烹饪方式。在我们的黑人历史月厨艺大赛中,Marty以他的炸鸡(图3)赢得了最佳鸡肉美食。你喜欢炸鸡或者鸡肉吗?你尝过美国的“南方炸鸡”(soul food)吗?


#Embrace Diversity ##Black is Beautiful# Macaroni &Cheese and Chicken are commonly described as “soul food”, these hearty dishes have a firm place in many special occasions. Macaroni and Cheese (pic 2 at below) is held to a high standard in the African-American community. Mostly it is made from scratch with a variety of different types of cheeses, sometimes a “secret” ingredient, or topping, and almost always baked, though there may be regional variations. It a holiday side dish staple. 


Historically, chicken has been an affordable source of meat and has become a common ingredient in many American food traditions. In soul food, you can find it fried, baked, broiled or done a number of other ways.   Marty is the winner of best chicken dish- Crack Chicken (Pic 3 at below) during our Black History month cook-off.  Do you like fried chicken or chicken dishes?  Have you tried America’s “soul food”?

辣酱起源于美国中西部,是一种通常会含有辣椒、肉、番茄还有一些其他调味料的香辣炖,在一些地区还加入豆子。对于什么样的辣酱才算好辣酱,尤其是对于是否要加入豆子,一直是仁者见仁智者见智,所以就有了1952年首次举行的辣酱厨艺大赛。从1967年举行的第二次厨艺大赛开始,辣酱制作大比拼成为定期举行的创意挑战。比赛是友好的,但是很多人坚信自己的祖传配方才是最棒的。香辣炖在许多不同类型的非裔美国人饮食传统中都是非常常见的。Joe Williams凭借他的“无敌辣酱”赢得了厨艺大赛。你喜欢吃辣吗?你最喜欢吃什么辣味美食?


#Embrace Diversity ##Black is Beautiful# Chili has it’s origins in the American mid-West and is a spicy stew that often contains chili pepper, meat, tomatoes, other seasonings, and in some regions beans. There is a long standing divide in what makes good chili, especially whether or not to include beans, which led to the first ever known Chili cook-off in 1952. 


The second known cook-off, which happened in 1967, helped make chili cook-offs a regular occurrence challenging creativity and friendly competition with many convinced that their family’s recipe is the best. Stews are very common in many different types of African American food traditions.  Joe Williams won the cook off for his Spicy Million Spice Chili. Do you like spicy food? #Embrace Diversity ##Black is Beautiful# BBQ and potato salad are staples of the summer cookout, a time to gather with family and friends. BBQ has become an American culinary tradition that many hold dear and are passionate about. Though many cultures lay claim as the origin of barbecue, the U.S. has made it its own with several distinct regional flavor styles that include Memphis BBQ, Tennessee BBQ, North Carolina BBQ, Kansas City BBQ, and Texas BBQ.  In pre-Civil War time, people of color often used the BBQ method for cooking pork and when they moved north, they helped disseminate this style of cooking, where it grew and develop into many different forms. Potato Salad is a favorite side dish of holidays and get-togethers with family and friends. Like with chili, there are many different variations of it and often can be a point of pride or contention.  For our smoked meat and potato salad Black History month cook-off, meet our winning chefs, Jeff Strauss and Katherine Stewart!
